If there is a large gap normal to the coupling surface, what interpolation algorithm should be chosen as appropriate and why?
Small gaps and overlaps are generally fine with any mapping algorithm: Mapping configuration | preCICE - The Coupling Library
If the two geometries are very different (e.g., different shapes), then I would actually suggest that you look into making them better fit, first.
